Colorful Rainbow Muffins Recipe

Well.. It's not really a recipe.. I admit I sort of just took a ready cake mix, prepared it as it said on the package (with the things that needed to be added), and instead of putting the mixture into a cake pattern, I put it into a cupcakes pan.

For this I used a golden cake mixture. You can use a yellow or a white one for this, too. The only thing I added was food coloring, to get the colorful effect! After preparing the mixture, I just divided it in 5 and poured each section into a small dish. Each section got it's color by adding 3-6 drops food coloring into it. (White cake mixture may need less).
The frosting was made out of Nutella. I've found the recipe for the frosting here.

  • 1/2 C butter, room temperature
  • 1 C Nutella
  • 1 C powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1-2 T milk
Beat butter until smooth. Add Nutella and beat together until thoroughly combined. Slowly add powdered sugar, mixing until combined. Add vanilla and 1 tablespoon of milk. Add additional milk or powdered sugar as needed to reach desired consistency. Pipe or spread onto completely cooled cupcakes.

I also added colorful star sprinkles on top :)

Chocolate Chip Cookies Recipe


I have found this recipe for basic chocolate chip cookies online, changed it a little, and from that day on my brother in law won't leave me alone asking me to make them over and over again. (problem is, they last only one day before everybody eats them X_X). Alex doesn't really likes baked stuff (I know. Crazy.) and even HE really liked those cookies! So that's a good sign :)
Usually I do them with dark chocolate chips, but this time I've decided to try it with milk chocolate chips. Which turned out not bad at all, too!
It is really easy to do and takes no longer than 15 minutes from the minute you're starting making them, until you place them in the oven.
I have decided to share this recipe with my lovely readres. You have to try these! Let me know if you did, and how it turned out. I'd love to hear! :)


Ingredients:
2 1/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
250 ml unsalted butter, melted
1 1/4 cups lightly packed brown/yellow sugar
1 egg
1 1/2 tsp vanilla
300 ml chocolate chips

Directions:
* Preheat oven to 350F (180C). Lightly spray a baking sheet with oil.
* In a medium bowl, use a fork to stir flour with baking soda and salt.
* In a large bowl, using a wooden spoon or an electric mixer, beat butter with sugar until creamy, about 1 min. Beat in egg and vanilla.
* Gradually stir flour mixture into butter mixture, until just combined.
* Mix in the chocolate chips.
* Scoop about 1 tbsp of dough on the baking sheet. Repeat with remaining dough, placing about 1 inch apart.
* Bake in the center of the oven for about 10 minutes, or until the cookies are golden around the edges.
* Let cookies cool down before serving.

Coffee And Raisin Muffins

This is the first time I'm trying to improvise with a muffins recipe, and it turned out pretty darn good! So I thought I will share it with you guys! :)
I was actually looking for a good coffee muffins recipe, but all of them included some ingredients which I didn't have. So I found this basic and simple muffins recipe, changed it a little and added some ingredients. I also had some raisins so I thought I'll add them too.
It's super easy to do and comes out delicious! :))
So here is my Coffee and Raisins muffins recipe:


Ingredients:
2 Cups all-purpose flour
1/2 Cup + 2 tablespoons sugar
1 Tablespoon baking powder
1/2 Teaspoon salt
2 Tablespoons of your favorite coffee
1/3 Cup chocolate milk powder 
1 Egg
3/4 Cup milk
1/3 Cup vegetable oil
1/2 Teaspoon vanilla extract
1/2 Cup raisins 

In a large bowl, combine all the dry ingredients (flour, sugar, baking powder, salt, coffee and chocolate milk powder). In a small bowl, beat the egg, milk, oil and vanilla. Pour into the dry ingredients and stir until just moistened. Fill greased or paper lined muffin cups and bake at 400 ℉(Or 200 °C)  for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out dry.
